Chicken Wings and Papaya Mango Gastrique

 

For the wings I am just going to give the ingredients.  You can make as many or as few as you want.

 

Wings

 

  • Chicken wings, preferable separated and the tips removed but you can also use whole wings

  • Olive oil, preferably extra virgin

  • Emeril’s or Paul Prudhomme’s chicken rub

 

Spread the wings skin side down. Coat generously with olive oil. Then coat with a thick coat of the rub. This is key.  Turn wings over.  Repeat olive oil and rub.  

 

Place in 375º oven for about 1 - 1 ½ hours or until crispness desired. 

 

Serve with papaya mango gastrique.

 

Papaya Mango Gastrique

 

  • ½ papaya

  • 1 mango

  • 1/3-1/2 cup water

  • ¼ cup rice vinegar

 

Remove skin from fruit. Cut fruit into small chunks.  Place in pan with water and vinegar.  Bring to a boil. Reduce heat to medium, cover.  Cook for about 20 minutes or until the fruit is tender. Add water if evaporates as needed. Purée fruit.  Add water as needed until it has a smooth consistency.
