Recipe Video: Four Easy, Delicious Pizzettas

You can use any combination of ingredients you want.  Here are 4 suggestions.

  • Small flour tortillas


Cut tortillas into heart shapes.  Char over open flame on stove.  Keep moving the tortillas so they don’t burn.  Punch out air pockets as they appear.


1.Tomato Parmigiano Reggiano


  • Kumamoto tomato

  • Heirloom tomato

  • Good extra virgin olive oil

  • Parmigiano Reggiano

  • Basil leaves

  • Salt

  • Pepper

Preheat oven to 350 degrees.

Shave Parmigiano onto tortilla.  Place in oven to melt cheese.

Chop up a few slices of tomato.  Place on tortilla.  Drizzle olive oil.  Season with salt and pepper. Cut 1-2 basil leaves into chiffonade and place on tortilla.


2. Shrimp, Avocado with Chipotle Mayonnaise


  • One shrimp per tortilla

  • Butter

  • Avocado

  • Cilantro

  • 2 heaping tbsp Mayonnaise

  • ¼ - ½ tsp chili powder

  • ¼ - ½ tsp chipotle chili powder

Combine mayonnaise and both chili powders.  Flavors will meld while preparing rest of tortilla.

Sauté shrimp in butter.

Cut two avocado slices.  Arrange on tortilla, on one each side.  Cut shrimp in half crosswise.  Place one half on each side.  Garnish with chipotle mayonnaise and a sprinkling of chopped cilantro.

3. Gorgonzola Pear


  • Bartlette pear

  • Gorgonzola cheese

  • Pomegranate seeds

  • Very good extra virgin olive oil

Crumble cheese over tortilla.  Place in oven to melt.  You really just want to get it nice and warm as it will only melt so much.

Cut two slices of pear lengthwise.  Place on either side of tortilla.  Drizzle a little olive oil over.  Place pomegranate seeds between pear slices.


4. Strawberry and Blood Orange


This one is a delightful surprise of flavors that work perfectly with the charred tortilla.

  • Strawberry jam

  • Strawberries

  • Blood orange

  • Bittersweet chocolate

  • Whipped cream

Sread strawberry jam over tortilla.  Slice strawberries crosswise.  Cut the rind off orange and cut sections out between membranes.  Arrange fruit on tortilla.

Melt chocolate in bain-marie.  Drizzle over fruit.  Garnish with dollops of whipped cream.
